Molding single-colored chocolates





1. Spoon melted chocolate into chosen mold.

2. Tap the mould gently to distribute chocolates evenly and to release bubbles. Insert lollipop stick if needed.

3. Place the mould inside the freezer to set. Number of minutes as when chocolate will set depends on the size and thickness of the chocolate mould and temperature of the freezer.

Chocolates should not be allowed to set in the freezer for a long time since condensation will occur, resulting to a not-so-attractive finish and shorter shelf life.

4. To determine if the chocolate has thoroughly set. Check the front of the mold if it is entirely cloudy or frosted. If it is so, then the chocolates are ready for un-moulding.

5. Before wrapping the chocolate, wait for half an hour to allow chocolates to adjust to room temperature.

6. Store finished chocolates in styro containers, away from heat and sunlight.

How to melt the compound chocolate




1. Pour water on the lower pan of a double boiler making sure that it doesn't reach the bottom of the upper pan

2. Simmer water and do not allow to boil

3. Put the upper part of the double-boiler, with the chopped chocolates in it, on top of the lower pan and stir gently until chocolate melts.

- Proper storage of chocolates
Store chocolates in styro boxes. It must not be stored inside the refrigerator or freezer since moisture develops on the surface and prevents it from melting.

- Shelf life
All brown chocolates last for about 8 months to a year while white chocolate and colored ones only last for about 3 months.

- Caring for moulds

There is no need to wash moulds in between candy moldings. Wash the molds before and after you are done using them.

Wash the moulds with a cloth in a lukewarm, mild soap solution. Rinse the moulds under lukewarm running water, never use boiling water.

Store the moulds in a cool, dry place, preferably on a flat surface.

Refrain from soaking moulds in soapy water since soap leaves a film and may cause the mold to look permanently cloudy. if this happens, however, it will not adversely affect the performance of the mould.

Never use any sort of abrasive or scouring pad to clean the moulds.

Dry moulds with a soft cloth or towel before storing.

Do not wash moulds in dishwater for they will wrap.
